Simple Spring Cooking with Linen at the Heart of It

Spring invites a shift in the kitchen… toward lighter meals, brighter flavors, and a slower pace. It's a season for reconnecting with the ingredients around us and finding joy in the small, grounding rituals of home cooking. One of the simplest ways to bring that sense of ease and beauty into your kitchen is with natural materials like linen.

Linen brings warmth and ease to cooking. A well-worn apron keeps you grounded while stirring at the stove. Soft tea towels dry hands, line bread baskets, or catch drips on the table. A Favorite Spring Dinner: Herbed Chicken Thighs with Asparagus and Lemon

Ingredients

  • 4 bone-in, skin-on chicken thighs

  • 1 bunch asparagus, trimmed

  • 1 lemon, thinly sliced

  • 3 cloves garlic, smashed

  • A few sprigs of fresh herbs (thyme, rosemary, or tarragon)

  • Olive oil

  • Salt and pepper

Instructions

  1. Preheat oven to 425°F.

  2. Pat chicken dry and season with salt and pepper.

  3. In a cast iron skillet or baking dish, heat a bit of olive oil. Sear chicken thighs skin-side down until golden, about 5–7 minutes.

  4. Flip chicken, then add asparagus, lemon slices, garlic, and herbs to the pan. Drizzle with more olive oil and a pinch of salt.

  5. Roast for 20–25 minutes until chicken is cooked through and asparagus is tender.

  6. Serve with crusty bread or a simple grain like farro to soak up the lemony juices.
